German Potato Salad
Story behind the recipe: This is a traditional dish that has been passed down through the generations that my family enjoys at family gatherings and picnics. It's a perfect accompaniment for brats and sauerkraut.
Description of the dish: Traditional German-style potato salad. May be served hot or cold - both are equally good.
This recipe makes 10 to 12 servings.
Time to prep: 10 to 15 minutes
Time to cook: 30 minutes
Ingredients:
- 4 lbs small red potatoes, cooked
- 4 slices of bacon, diced
- 1/2 cup bacon drippings
- 1/2 cup sugar
- 3 tablespoons flour
- 2 tsp salt (I use a little less)
- 1/4 tsp pepper (I am very generous with the pepper more like 1/2 tsp)
- 1 cup white vinegar
- 1 cup water
- 4 green onions, chopped
Cooking Instructions:
- Fry bacon until golden brown.
- Drain on paper towel and crumble.
- Add additional bacon grease to make 1/2 cup.
- Blend sugar, flour, salt and pepper.
- Stir into bacon drippings to make smooth paste.
- Add vinegar and water.
- Bring to boil and simmer 2 to 3 minutes until sauce is slightly thickened.
- Slice potatoes into the warm sauce and stir to coat.
- Stir in green onions and half the bacon bits.
- Pour into serving container and top with remaining bacon bits.
Recommended side dishes: A must for Oktoberfest!
